The wild onions or lampagioni, also known as canine onions or bowed wild onions, is a herbaceous plant whose botanical name is muscari comosum. For the Apulian cuisine it is one of the most delicious  preserves among our typical produces and food for real connoisseurs.

The onion has a bitter taste and keeps its crispness  in the mouth; it is a valuable food  among  the traditional  produces from Puglia, rich in potassium, vitamins and minerals.

The plant grows wild in uncultivated land and our Salento tradition wants it to be processed with salt and vinegar, delicately flavoured with garlic and mint, and preserved in extra virgin olive oil.

Once the jar is opened, keep the inside edge always clean and coat with oil after each use, keep it away from heat sources and protected from sunlight.
